½ teaspoon cinnamon

A pinch of clove

A pinch of nutmeg

2 egg whites

¼ cup sugar

1 carton of sweet cream

Powdered sugar

1 heaping tablespoon of apple purée

A pinch of cinnamon

3 tablespoons of small apple chunks soaked in cold water and lemon juice

Method
The cake: Beat the egg whites with ¼ cup of sugar. Mix together all the other ingredients in a separate bowl. Fold the beaten egg into the other ingredients. Pour into individual silicone forms; bake for 15-20 minutes in an oven that was pre-heated to 180 degrees.

The cream topping: Whip the cream. Add the sugar and the cinnamon. When the mixture is stiff, add the apple purée and the apple chunks. Serve the cold whipped apple cream separately.

POMEGRANATE MOUSSE

Ingredients

1 cup of cold sweet cream

2 teaspoons of powdered sugar

¼ vanilla bean, seeds only

Grated peel of half a fresh lemon

2 fresh pomegranates, seeds only

I tablespoon white sugar

Elegant martini glasses for serving

Whip the cream with the vanilla and powdered sugar in a mixer. When the cream is firm and light, put the mixing bowl, as is, into the refrigerator. Remove the pomegranate seeds from the skins. Mix the pomegranate seeds with the grated lemon peel and a tablespoon of sugar (not the powdered sugar!)

To serve

Place a heaped tablespoon of seasoned pomegranate seeds into each martini glass; top with a heaping tablespoon of the whipped vanilla cream, garnish with a few more pomegranate seeds and serve. (Kids will love to lick the remaining whipped cream off the beaters.)
